VERUS South Tyrolean Weissburgunder DOC

WINE DESCRIPTION

This wine captivates with its bright yellow colour with green hues. It delights the nose with a complex interplay of fresh apple to mature tropical fruits. On the palate, it impresses with its elegant freshness and density, elegance, sappiness and great length.

OPES South Tyrolean Pinot Grigio DOC

WINE DESCRIPTION

This wine captivates with its bright straw-yellow colour with green hues. It delights the nose with a complex interplay of fresh white peach, pear and floral fragrances and fine roasty aromas. On the palate, it impresses with its elegant richness and density, underpinned by subtle vanilla notes. The vines of the Pinot Grigio grow on the southern slopes below the wine village of Kaltern on the South Tyrolean Wine Road. The grapes mature at an altitude of 320-400 metres, on well-drained soil and mineral-rich glacial moraines.

AURATUS Südtiroler Gewürztraminer DOC

WINE DESCRIPTION

This Gewürztraminer is characterized by a typical bright golden yellow colour with green reflexions, an intense bouquet of roses, geraniums and lychees and accentuated by discrete spicy notes of cinnamon and cloves. The palate is full with body typically robust and juicy and elegant structure.

WINE GROWING AREA

Our Gewürztraminer AURATUS grows in its place of origin, Tramin, on the South Tyrolean Wine Route. On an exposed sunny vineyard in the Rungg area of Tramin, we take advantage of the ideal conditions for the production of physiologically ripe Gewürztraminer grapes. The vines grow at an altitude between 320 – 400 metres in clay-loam soil.

HARVEST AND YIELD

When the grapes have reached their ideal, physiological maturity, they are selected and sorted by hand from late September to mid-October to ensure only the best grapes are used in the further processing of this Gewürztraminer. From a plant density of 7,000 vines, a yield of 45 hectolitres per hectare of wine is produced.

VINIFICATION

The fully ripe and selected grapes undergo an approximately seven-hour process of cold maceration before pressing. Temperature-controlled fermentation at 20°C and ageing on the lees give this Gewürztraminer its special flavour.

RECOMENDATION

Gewürztraminer AURATUS is ideal as an aperitif and goes exceptionally well with spicy foods, liver pate, Asian cuisine, sushi, sophisticated fish dishes, crab and lobster.

PARATUS South Tyrolean Sauvignon DOC

WINE DESCRIPTION

Sauvignon PARATUS expresses the best interaction between vine, soil types and microclimate. Selected grapes from the indicated areas make this expressive, typical and complex Sauvignon. Paratus combines vegetable and fruity-flowered notes of elderberry flowers and raisins, interweaving its delicate acidity with a full taste.

WINE GROWING AREA

Careful manual harvest of ripe grapes around mid-October with a yield of about 50 hl per hectare.

VINIFICATION

After a maceration, follows gentle squeezing of the grapes. Clarification of the must happens by natural sedimentation. The fermentation takes place in steel at a temperature of 17 ° C.

RECOMENDATION

Sauvignon PARATUS pairs wonderfully with grilled fish, asparagus, both green and white, but also with tasty vegetable risotto, and is a good sip for special moments.

NATUS Souvignier Gris IGP Mitterberg

WINE DESCRIPTION

On the nose, this Souvignier Gris unfolds an intense, complex bouquet of fresh peach and lemon zest. On the palate, it impresses with a ripe, balanced freshness and aromas of apple, yellow tropical fruit and pink grapefruit. The finish is long-lasting with a lovely, juicy and creamy structure.

GRAPE DESCRIPTION

Souvignier Gris is a fungus-resistant grape variety (PIWI) and is particularly ecological in cultivation. The vine is characterised by a very robust foliage and loose-berried grapes.

WINE GROWING AREA

The grapes of the Souvignier Gris grow on the southern slopes below the wine village of Kaltern on the South Tyrolean Wine Road. The grapes mature at an altitude of 320-400 metres, on well-drained soil and mineral-rich glacial moraines.

HARVEST AND YIELD

In October, the grapes of the Souvignier Gris reach the ideal degree of ripeness for the harvest. The grapes are carefully picked by hand.

VINIFICATION

After a short maceration period, the selected Souvignier Gris grapes are gently pressed. The fermentation takes place in steel at a temperature of 17°C.

RECOMENDATION

Souvignier Gris is a great accompaniment to Asian, exotic dishes or even sushi. It also rounds off pasta dishes perfectly.

PERLHOFER - Cuvée Red IGT Weinberg Dolomiten

WINE DESCRIPTION

The rubin red colour and a successful combination of three grape varietals give this “Perlhofer” its complexity. The wine impresses with its unique fruit flavours of raspberry, blackberry, sour cherry and wild berries. Spicy and fruity on the palate, it presents an elegant aftertaste and velvety, smooth structure.

WINE GROWING AREA

The three varietals in the Perlhofer grow in three carefully selected vineyards, mainly in the Upper Etsch, the Lowlands and on the Ritten. The vines, some of which are more than 50 years old, are trained over trellises and traditional pergola systems and grow at an altitude of 450 metres.

HARVEST AND YIELD

Due to the different varietals and vineyards, the grapes are handpicked as they reach full maturity during October. The yield is 70 hectolitres of wine per hectare.

VINIFICATION

Once the selected grapes have been delivered to the winery, they undergo separate, traditional maceration at a controlled temperature of 28°C. After assemblage (blending) the wine is aged in large wooden barrels.

RECOMENDATION

The Perlhofer is an excellent accompaniment to antipasti, grilled fish and light meat dishes. It is a wine for everyone that can be enjoyed at any time on different occasions.

LATUS South Tyrolean Lagrein DOC - Autochthonous vine

WINE DESCRIPTION

Ruby red in colour. This Lagrein LATUS presents a delicate and spicy note of ripe sour cherries, forest berries and chocolate in the nose. On the palate, it unfolds with a bold, full-bodied but lush, velvety structure with a minerally, complex and lingering finish.

WINE GROWING AREA

The Lagrein vines, some of which are over 45 years old, grow in Auer in the South Tyrolean Lowlands and a part in Bozen. Perfect climatic conditions prevail for the Lagrein grape to mature at the carefully selected vineyards, with sand and gravel soils located at an altitude between 220 – 350 metres.

HARVEST AND YIELD

The Lagrein grapes are picked by hand with the utmost care when they are perfectly ripe for harvesting from late September to mid-October. The vines produce a yield of 60 hectolitres per hectare.

VINIFICATION

After a short maceration time, the selected grapes are fermented at a constant temperature of 28°C. This wine is then aged in French barriques and large oak barrels.

RECOMENDATION

This Lagrein is an excellent accompaniment to red meats, game and mature cheese.

MOLLIS South Tyrolean Merlot DOC

WINE DESCRIPTION

This Merlot is an alluring deep ruby-red colour. Its bouquet is fruity and rich with subtle hints of blackberries, forest berries and soft tannins. The wine unfolds on the palate with a soft tannin structure in a smooth but long, lingering aftertaste. A wine to delight all lovers of Merlot.

The grapes used to make this Merlot grow in Bozen and in Tramin at an altitude of 450 – 500 metres. The vines are trained on trellises (Guyot system) and thrive on heat-retaining, sandy porphyry soils.

HARVEST AND YIELD

The grapes are handpicked as they reach full maturity at mid-October. The yield is 50 hectolitres of wine per hectare.

VINIFICATION

The grapes are lightly crushed, destemmed and fermented at a temperature of 28°C. By gently pounding the skins down and carefully pumping the must around, contact with the skins is maintained for as long as possible to achieve good colour and flavour extraction. The wine is aged in small French oak barrels.

RECOMENDATION

This Merlot MOLLIS is a beautiful accompaniment to red meat, game, grilled dishes and mature cheeses.

GRATUS South Tyrolean Cabernet Sauvignon DOC

WINE DESCRIPTION

Ruby red in colour, a bouquet of classic Cabernet aromas such as ripe black currants, blackberries and green pepper. With a juicy, full and soft tannin taste, it is concentrated on the palate and characterised by its high denseness and complexity.

WINE GROWING AREA

The sun-drenched plains of the Lowlands and the hilltops surrounding Montan is where we find the grapes ripening especially for our Cabernet GRATUS. The sandy clay soils provide the best conditions for the over-35- year-old vines to grow. They are cultivated using the Guyot trellis system and lie at 220 - 400 metres above sea level.

HARVEST AND YIELD

The sun-ripened grapes are harvested by hand from mid to end-October. The yield is 50 hectolitres of wine per hectare.

VINIFICATION

The handpicked grapes are gently crushed and fermented in a fermentation tank at a controlled temperature of 28°C. During the fermentation process, the must and grape skins remain in constant contact with each other in order to achieve a better fruit, colour and tannin quality. After fermentation, this Cabernet is aged in small French oak barrels and then in the bottle.

RECOMENDATION

This Cabernet GRATUS goes superbly well with game, exquisite, dark meat dishes, grilled dishes and mature cheeses.

RAMUS South Tyrolean Cabernet Merlot DOC

WINE DESCRIPTION

This Cabernet-Merlot is a classic red wine, very compact and intense in colour. It has great complexity with various nuances of forest fruits and black currants, as well as strong but soft tannins. It has a dry, robust flavour with a smoothly harmonious tannin structure, characteristic and lingering.

WINE GROWING AREA

At the foot of the Rittner plateau, we find steep, barren and rocky tiers with sandy, clay, porphyry soils. Thanks to the south-facing position of the slope, at an altitude of 450 metres, these vineyards are especially suited to the varietal typical and characteristic cultivation of these grape varieties.

HARVEST AND YIELD

The careful hand harvesting begins from mid to end-October, as the grapes reach full maturity. This can generate a yield of 50 hectolitres of wine per hectare.

VINIFICATION

The grapes are delivered to the winery in crates of 220 kg. They are lightly crushed, destemmed and fermented at a temperature of 28°C. By gently pounding the skins down and carefully pumping the must around, contact with the skins is maintained for as long as possible to achieve good colour and flavour extraction. The wine is aged in French barrique barrels, followed in the bottle to mature fully.

RECOMENDATION

This wine goes exceptionally well with hearty meat dishes, game, grilled dishes and cheese.

DIGNUS South Tyrolean Pinot Noir DOC

WINE DESCRIPTION

The Pinot Noir DIGNUS impresses with its ruby red hue. Its bouquet is complex and reminiscent of the spicy, delicate, fruity notes of ripe, red berries and cherries. On the palate it presents a succulent, elegant structure, soft tannins, with an aristocratic richness and a lingering aftertaste.

WINE GROWING AREA

The best conditions for the ripening of Pinot Noir grapes are on the steep slopes in the sunny, southwest-facing area of Glen, in the municipality of Montan. At an altitude of 450-600 metres, the gravelly clay soils allow the trellised vines to thrive.

HARVEST AND YIELD

When the Pinot Noir grapes have reached perfect ripeness, they are immediately handpicked by experienced winegrowers, generally around mid-end October. With a plant density of 8,000 vines, 40 hectolitres of wine is produced per hectare.

VINIFICATION

Fermentation of the fresh, hand-selected Pinot Noir grapes takes place in open fermenting vats. To achieve the best possible colour and fruit favour in the wine, so that it remains in contact with the skins for a long time. After the temperature-controlled fermentation process at 28°C, the wine is aged in small French oak barrels.

RECOMENDATION

This Pinot Noir DIGNUS goes perfectly with odourful starters, red meat, game birds and medium-aged cheeses.

NOVIS South Tyrolean Lago di Caldaro Classico Superiore DOC - Autochthonous vine

WINE DESCRIPTION

Ruby in colour with purple hues, the aroma reminds of mature cherries, forest berries and viola. On the palate the wine is structured and elegant, fruity with a fresh note and well-balanced.

WINE GROWING AREA

The picturesque municipality of Caldaro, above the famous lake, are the setting for the pergola and guyot trained Vernatsch/Schiava grapes. At an altitude of 320- 450 warm, sandy, gravel and morainic soils, provide the perfect growing conditions for these grapes.

HARVEST AND YIELD

Harvesting of the Vernatsch/Schiava grapes takes place at the ideal stage of maturity in late September to mid-October. From the handpicked and selected grapes, a yield of 65 hectolitres of wine per hectare is produced.

VINIFICATION

The Vernatsch/Schiava grapes are gently crushed and destemmed and then fermented at a constant temperature of 22° for 10 days. The wine is subsequently added in large wooden barrels.

RECOMENDATION

The NOVIS Kalterersee is an excellent accompaniment to the traditional South Tyrolean and light dishes, meat, grilled fish and is also a great drop to share with good company.
